Nothing beats a smoothie in the early days of January; after weeks of indulgence the zesty freshness of fruit and veg is always welcome! This smoothie recipe uses some of the best foods of the season – including blood orange and beetroot. Add some freshly grated ginger if you want to give it a bit of a kick. Drink and feel virtuous. . .
1 medium beetroot, grated
3 medium blood oranges
1 medium ripe avocado
1 tbsp honey
1 tbsp vanilla extract
- Scrub the beetroot and slice into quarters or grate if you don’t have a high powered blender.
- Peel the blood oranges, half crossways and remove any pips.
- Halve the avocado and scoop out the flesh.
- Add the flesh of the blood oranges and avocado, the beetroot, honey, vanilla extract and about 250ml of water to the blender.
- Blend until smooth.
