As a brand we take our responsibilities seriously and always adhere to best practice within our industry. Here are some of the ways this ethos is clearly evident.

Hickory is committed to limiting the effects of climate change. As such we look to educate and train all of our employees and guests to make every effort in reducing any negative impact on the environment they may make as a result of Hickory activities. We also encourage the people we support, stakeholders, contractors and suppliers to consider the environment in their work, activities and choices. We are very proud of our status as a Green Tourism Business Scheme Gold Award Holder which recognises our work towards minimising operational impacts on the environment through resource conservation and environmentally sound practices

Green Action Plan

In order to remain focused and continually strive for improvement, Hickory has established a Green Action Plan (GAP). This has been designed to set up the guidelines and steps to follow in order to improve Hickory’s sustainability and resource efficiency.

The GAP sets out specific targets and timelines for their completion, as well as a senior staff member responsible for monitoring completion. The GAP will be monitored every month at the monthly Green Team meetings in order to assess the implementation of the described measure. The GAP will be reviewed every six months to ensure it is updated where appropriate.

We have made significant efforts to reduce our carbon footprint and the amount of waste that we send to landfill and are proud that we now recycle more 50% of all waste. Environmental objectives form an integral part of our Business Plan and we aim to become a sustainable caterer through our work in the following areas:

Waste Management

We acknowledge and endorse all current waste regulations and try to exceed them as an example of best practice in the industry when possible. Hence, we:

  • Paper, cardboard, cans, plastics, glass and batteries are among the items we recycle.
  • Our cooking oil is collected by a SEPA registered company and recycled into bio diesel.
  • Food waste is recycled and collected by Keenan Recycling for the production of green electricity and natural bio-fertilisers.
  • We use an eco-friendly biological grease trap to avoid any grease or fats reaching sewers and drains.

Energy Management

Our energy consumption is continually monitored to improve our energy efficiency and we have taken the following steps:

  • Centrally controlled air conditioning in all areas, including the venue space.
  • Heating and lighting is isolated or switched off in areas that are not being used.
  • Low-level lighting has been installed in areas where light is consistently used for more than 6 hours a day.
  • Motion detectors have been installed in parts of the venue to reduce the energy use.

Supplier Management

We ensure that our suppliers are aware of our environmental goals and have their own environmental policies in place. We monitor their performance to ensure the goods and services they provide meet our environmental objectives.

Our guests

Our guests can help us sustain the environment by:

  • Passing on any waste to staff for recycling;
  • Use public transport links to reach us;
  • Using only the water you need in our bathrooms.

Green Team

Hickory’s green team is made up from representatives across the business, including senior management, venue management, kitchen, planning, operations, marketing and front of house. The green team meet once a month and are responsible for ensuring Hickory achieves its environmental goals.

The green team monitor and review Hickory’s sustainable environment aims and achievements as compiled in the Green Action Plan. Projects and issues are then assigned to our Green Champion to investigate, achieve and monitor. To ensure we are always achieving our targets, monthly checks are completed by our department heads and these are then reviewed at the green meetings where progress is monitored and achievements rewarded.

We demonstrate a strong commitment to sustainable best practice believing it is essential to reduce the impact on the environment. Hickory is committed to reducing its negative effect on the planet with significant efforts being made to reduce carbon footprint and the amount of waste that it sends to landfill. Environmental objectives form an integral part of the Company’s Business Plan, as does its Environmental Policy.

We intend to inform our suppliers and contractors of our environmental policies and will monitor their performance to ensure that the goods and services they provide meet our environmental objectives.

Our customers and guests are made aware of our initiatives and we encourage them to help us achieve our environmental goals and objectives.

Our employees will be provided with the information, instruction and training necessary to fulfil the requirements of our policy.

Our policy is monitored and reviewed to ensure its effectiveness and will be revised where necessary.

At Hickory, quality is our number one priority. That said, we are conscious that our purchases can have an impact that is felt thousands of miles away, economically, socially, and environmentally. As such, we are committed to sourcing produce that is local, seasonal and sustainably sourced. We are also committed to ensuring our suppliers behave in a similar way and as such our procurement policy specifically sets out a detailed supplier screening process that ensures ethical and environmental responsibilities are met throughout our supply chain. As part of our screening process, all of our suppliers are expected to evidence their sustainability commitment and policy, including supporting evidence and documentation.

As a purchaser we will take into account what impact it will have on the local and wider environment.

  • Hickory will aim to buy environmentally and socially responsible products.
  • The welfare of animals and the environment are important to us. We aim to make a difference by buying products that show this commitment.
  • We aim to reduce waste and other negative impacts on the environment.
  • Where possible we use Fair Trade produce.

Local

Hickory is proud to support Scottish businesses and the local economy. As a member of East Lothian Food and Drink Hickory is committed to buying local whenever possible, meaning that our purchases have only a short distance to travel ensuring quality, freshness and minimising our carbon footprint.

Ethical

Hickory recognises the potential economic, social and environmental impact our purchases can have around the world. As such we are committed to buying fair-trade wherever possible. These fair-trade purchases contribute to supporting the development of thriving farming and worker communities, empowering the local communities. We are constantly looking at ways in which we can improve our ethical contribution and have recently made the decision that all of our tea, coffee and sugar will be sourced as fair-trade.

Sustainable

How we get our products is just as important as where we get them from. Hickory strives to use products that are sustainably produced and we pride ourselves on the quality of suppliers we are able to work with. Our meat and seafood is sustainably sourced from local suppliers. The close working relationships we have built with our quality suppliers ensure we share similar considerations of the environment we work in, working in partnership to address issues such as over fishing and pollution.

ACCESSIBILITY

As an example of our commitment to accessibility, Hickory’s HQ at Eskmills Venue take the level of accessibility we provide very seriously and pride ourselves on the measures we take.  We constantly review accessibility provision and are committed to investment in updated services and facilities.

Grounds

A large, secure car park (CCTV monitored) on-site for 350 vehicles. Parking is free to all Hickory guests.

Designated accessible parking spaces available upon request all at the front of the building (within 15 meters of the entrance).

The approach to the front entrance is at level access.

Reception

A seating area is provided in the main reception area and the floor in level throughout.

The reception and main entrance has a hard, slip resistant floor and is well lit.

We have accessible toilets in the reception area.

Public areas

There are two ladies’ toilets and one gentleman’s accessible toilets in the public area of the building.

All doors, entrances and corridors are wide enough for wheelchairs, walking frames and pushchairs.

The main venue space has flexible seating.

Dining

Chefs are able to accommodate any special dietary requirements.

Staff can talk through the choice of dishes on offer.

All areas are spacious with a variety of seating arrangements.

Emergency Evacuation Procedures

All exits have level thresholds.

Emergency procedures are in place and assistance will be given in case of an emergency.

At Hickory, we recognise that we have environmental responsibility and are committed to working towards a sustainable future, aiming to become one of the environmentally friendly venues in Scotland.

We are members of the Green Tourism Business Scheme, and as an indicator of our sustainable practices we have achieved the Gold Award.

Our policy is to recycle as much waste as the local facilities allow. Our staff also separate bottles, cans and papers collected from events. We take the obvious steps like using energy saving lightbulbs and we are always looking for new ways to reduce our environmental impact.

Be a responsible visitor

Leave the Car: Give the car a rest. Try walking, cycling or using public transport. If you must make that trip in the car try car sharing.

Reduce, Reuse, Recycle: Pass any waste or packaging onto our staff, who will pass it on for recycling.

Be Water Wise: Please use water wisely. Turn off the tap after using the bathrooms and use our energy-saving hand dryers to dry your hands.

Respect Nature: Please respect our area of natural beauty, using designated footpaths and placing any cigarette ends in the bins provided.

If you are attending a conference only print materials that are required and consider sharing a taxi when travelling to/from local train stations or airports. Event staff will make sure all waste paper is recycled.

Local Produce: Our menus contain local, sustainable and organic produce. Why not try them?

Hickory’s commitment to quality runs deeper than most. We have adopted a quality management system that is all about giving the customer the confidence that can be provided by a business with a quality management system. What is a ‘quality’ management system?

A quality management system is a way of defining how an organization can meet the requirements of its customers and other stakeholders affected by its work. The adoption of a quality management system is a strategic decision by Hickory to help us improve our overall performance and provide a sound basis for sustainable development initiatives.

Why are we doing it?

Implementing a quality management system will help us:

  • Put our customers first, making sure we consistently meet their needs and enhance their satisfaction. This can lead to repeat custom, new clients and increased business

What is ISO?

ISO is the International Organization for Standardization who develop and publish International Standards. The standard provides guidance for companies who want to ensure their products and services consistently meet customer requirements and that quality is consistently improved.

The Hickory brand has been developed and enhanced to reflect the sales proposition, food proposition and Hickory’s overall reputation, a keynote for which is consistent high quality service delivery. Articulation of the company philosophy and incorporation in the brand: “Contemporary Catering for the Connoisseur”, clearly reflects the businesses essence. With the clear proposition that “We reinforce our client’s reputation (we understand that what we serve and how we behave has a knock on effect to our clients standing) by creating imaginative food (we are mindful of the importance of creating taste sensations) and delivering memorable events (we want our clients to commission us again) to the delight of those who experience them (reflecting back to you as the client and those of your guest).”

Hickory’s Quality Management Policy

At Hickory we pride ourselves on delivering the highest levels of service to all of our clients and recognises the importance of maintaining strict quality assurance standards. Hickory endeavours to provide a quality service that meets, and where possible exceeds, the needs and objectives of all our clients. Continuous improvement and feedback are essential to the development of our quality processes, and are documented and retained to ensure that quality management principles are rigorously enforced.

Socially, we are constantly working towards being regarded as a company that is transparent and ethical in all its dealings as well as making a positive contribution to the community in which we operate. Our team is always up for getting involved and going the extra mile, a brilliant example being our beach clean-up we organised through the Marine Conservation Society. This was a fantastic day organised to get our staff out and about with local volunteers and give something back to our local area.

We are a key employer in East Lothian and firmly believe in extracting as much as possible from the local talent pools. Working closely with Schools, Colleges and Universities in Edinburgh we adopt a recruitment process that’s inclusive for all candidates, particularly graduates and students, and are committed both to staff development and to creating opportunities for students and graduates to work and progress within the company. All of our front-of-house team are trained in-house to high standards, we recognise the importance of this and both our training and reward schemes reflect this. We never use agency staff, which is a policy no other caterer facilitates in Scotland and which guarantees consistency and first class service. We have created our ‘Talent Pipeline’, which allows talented and hard-working team members to take on and train in supervisory positions, preparing them for more senior roles within the hospitality and service industry. We are also aligned with HIT Scotland – who are at the forefront of identifying and developing the best talent in the Scottish hospitality industry through scholarships and bursaries.

As our business has rapidly grown and evolved we have accepted that we are unable to deliver every single event, especially those that may be smaller in size. As a result, we’ve partnered up with Social Bite, a social business that gives 100% of its profits to good causes. Every penny of their profits are given to good causes and 1 in 4 of their team are formerly homeless people.

Through our fundraising initiatives, we are proud to be involved with some fantastic causes. Over the past two years, we’ve worked with The Macmillan World’s Biggest Coffee Morning, Cash for Kids and the Edinburgh Moonwalk.

We sponsor a number of events during the year and we have a very active community and charity engagement programme. We are fully subscribed for 2016 and well planned for 2017, however we are always interested to hear from our clients if the event fits with our CSR policy.
