Here at Hickory we don’t believe in easy routes or following the herd (unless it’s grass-fed and organic). Our wedding food is sometimes quirky and imaginative, other times it’s nostalgic with a touch of tradition. But it’s ALWAYS delicious and the perfect wedding menu must have total buy-in from our engaged couple. The menu and wine tastings are great fun – it’s our way of teasing out likes and dislikes and even making something that’s special to the two of you (you want Italian/Scottish that works with your romantic countryside theme? No problem.)
Choose from gorgeous canapés such as our signature parmesan lollipops, crostini of herb-marinated seared beef fillet with mustard mayo, or how about little melba toasts with treacle-basted Belhaven smoked salmon and soured cream. Yep, those go down pretty well with a glass of fizz after you’ve said, “I do.”
We’ve loads of delish starters including roasted hoisin duck with spiced plum compote, duck rillettes and sesame croutons, or how about our tribute to Scottish favourites: haggis bon bon, black potato crisps, whisky sauce and turnip purée. To follow may we recommend the hugely popular (and utterly divine) corn-fed chicken breast stuffed with wild East Lothian mushrooms, spinach and cream cheese, wrapped in smoked bacon, served with a port wine reduction, spring onion mash and braised red cabbage. It’s as delicious as the name is long.
For some reason, couples always find dessert the easiest course to agree on – even though we have some mouthwatering options for you to choose from. Can we tempt you with date and apple sticky pudding served with vanilla bean ice cream and salted toffee sauce? Or might dark chocolate torte, pistachio tuile, glazed raspberries, and honeycomb ice cream be more up your street?
Whatever your own favourites, if yours is a Hickory wedding you can be sure that choosing your ultimate wedding menu will be one of the most enjoyable parts of getting married. Honest. Even though we might be a bit biased, we do think the food is one of the best bits about a wedding – apart from your dress, of course, (we also say all the right things).
