Hello, and welcome to the second edition of Hi! Hickory’s monthly news roundup. 

This month’s news is all about gin! Read on for more on the launch of our fabulous artisan gin bar, a delicious cocktail recipe and a chance to win a Hickory Bars gin experience at this year’s Royal Highland Show.

Hickory Bars at the Royal Highland Show 2016

We’re excited to be at this years Royal Highland Show, with our Hickory Bars’ artisan gin bar, ‘The Botanical Garden’. Our bar will be transformed into a botanic sanctuary and our drinks offering will celebrate the upsurge in the Scottish batch gin market.

We’ll be creating the ultimate gin experience in partnership with well-known Scottish gin brands (to be announced soon!). Think a perfect serve G&T menu, delicious gin cocktails, tastings from Scottish gin brands and a comfortable drinking environment. And there’ll be drinks for non gin lovers too.

Get your Royal Highland Show tickets at the ready, because this is an event you’re not going to want to miss. And you’ll enjoy the best cocktails you’ve ever tasted. Trust us.


Gin Cocktail Recipe 

This Cranberry and Elderflower Gin Fizz, created by our talented Hickory Bars team, went down an absolute treat at the launch event for the Royal Highland Show 2016 at Whitespace earlier this month. So we thought we’d share the recipe:

Ingredients: 50ml gin, 20ml fresh lemon juice, 20ml cranberry & elderflower syrup**, a dash of pasteurised egg white, soda water, edible flowers

Method: Add all ingredients to a cocktail shaker, except the soda, and dry shake (without ice), add ice and shake again for 10 seconds. Strain over ice in a tall glass and top with soda. Garnish with edible flowers and serve.

**For the elderflower & cranberry syrup, the measurements are 2 part cranberry, 1 part elderflower cordial, 1 part sugar and then reduced down by half.

tHe Haymarket Development

Building and planning great events is our speciality. Like this event to mark a major milestone in tHe Haymarket Edinburgh development, in conjunction with O’Leary PR. The aim of this event was to announce the new design plans for The Haymarket Project.

We created a playful Construction Zone, a food area thought up by our talented Event Planners and Development Chef. We had Tonka Trucks circulated with canapes, served by the Hickory team dressed in branded boiler suits. We also served foot long cheese straws served in drainpipes, cement mixer fruit bowls and other delicious goodies. Of course, we had a fuelling station for drinks too.

We booked Hickory for our client event because they had a reputation for delivering creative, high quality catering, but when we received the menu and the ideas for the event’s delivery we were just bowled over. The attention to detail was staggering: they had managed to take what was essentially a very basic brief and delivered something with imagination, that was on brand and very memorable. We couldn’t have asked for more.

The Hickory Bars Team

Our new bar managers, Adam Murphy and Harry Olorunda, have joined us to help create contemporary and stylish pop up bars for all sorts of events. They both boast impressive careers behind some of the most exciting bars in the world. This will help us to put Hickory Bars firmly on the hospitality map!

Merchants’ Hall Christmas

For 2 nights only… we’re transforming the stunning Merchants’ Hall into a majestic haven for Christmas parties. As one of Scotland’s leading caterers, we’ve created Christmas menus for 2016 with a fabulously inventive Hickory twist, combining festive favourites with contemporary flavours and a touch of sparkle, shimmer & shine.


Green Tourism – Recycling News

We’ve got some really good news. In the first 3 months of 2016, we’ve managed to send 49.88% of all our waste to be recycled. This is a huge achievement as last year we recycled on average 39.14%. We plan to reach a point where we recycle over 50% of all waste. We’ve got our #GreenTeam meetings planned. Watch this space!


Edinburgh Tourism Showcase

We enjoyed attending the Edinburgh Tourism Action Group Showcase at the Assembly Rooms, Edinburgh earlier in the month. It was a great opportunity to showcase our visitor experience and new products to like-minded people in sales, marketing and business development roles. The Hickory smoked marshmallows and fudge went down an absolute treat! We can’t wait to start working as an approved catering partner of the Assembly Rooms in July.

The CIS Excellence Awards 2016

We’re so proud of Stephanie, our Marketing Director, for being shortlisted as a finalist for the Employee of the Year Award from CIS Excellence Awards. We work hard to invest in all of our team, and offer our staff high quality training to help us and them achieve great success. We value and appreciate our employees, so they can be the best at what they do.


The Hickory Team is Growing 

Our team is made up of an award-winning selection of hand-picked individuals. We are growing and have a new additional across the business including the office team, Janet and Samantha. Nicole has joined our event planning team at Eskmills Venue and Kate has joined marketing as our Marketing Assistant. Chloe has also joined us as Finance Assistant.
