Our chefs plan menus around seasonal and sustainable local ingredients. We actively seek out local Scottish suppliers and small artisan producers to reduce food miles and support Scottish farms, fishermen, dairies, cheesemakers, butchers, bakers and more.

  • GAME: Braehead are game dealers based in Ayrshire – biggest game dealer in Scotland in partnership with the private estates in Scotland
  • CHEESE: Clarks based in Edinburgh supplying Scottish cheeses and artisan products
  • ICE CREAM: Di Rollo based in Musselburgh supplying all ice creams and sorbets
  • MEAT: Gilmours based in Musselburgh (supplying all meats from chicken to fillet of beef) pride themselves on only using Scottish products
  • VEG: Mark Murphy based in Edinburgh supplies all of our vegetables and again most of it is from Scotland
  • SEAFOOD: Clarks specializing in Seafood is based in Musselburgh and is a family run business with their own trawlers
